Try our homemade guacamole and crispy carnitas
Whether you’re celebrating or simply enjoying a delicious dinner, fresh guacamole is the perfect lead-in to your evening. Start your night with this tasty guacamole appetizer. Or, use this as a complement to your main course.
Homemade Guacamole (adapted from simplyscratch.com)
3 avocados, pitted and diced
2 roma tomatoes, seeds removed and diced
2-3 T red onion, diced
2 T cilantro
1 whole lime, juiced
1 clove garlic, minced
1 t salt
- Mash the avocado in a large bowl
- Add lime juice and salt; toss
- Add remaining elements and toss gently
- Refrigerate one hour before serving
For a main course, try our slow-cooker carnitas. These can be crisped up on the stovetop after cooking. They can be enjoyed as is, or on tortillas.
Pork Carnitas (Yield 6 servings)
3 pound pork roast
1 T olive oil
1 T salt
½ t pepper
½ T oregano
1 t cumin
1 small onion, sliced thin
2 large cloves garlic, minced
½ cup orange juice
Cilantro and lime for garnish
- Rinse the roast and pat dry
- Combine and stir oil and spices. Rub over the roast. Place in a slow-cooker with the fat cap facing up.
- Place sliced onions and garlic over the roast
- Pour orange juice over the roast
- Cover and cook on low 5-6 hours, or until tender and falling apart
- Remove fat cap
- Carefully pull apart the roast into bite-size pieces
Garnish with lime and cilantro; for crispier carnitas, cook pork pieces in a skillet over high heat for 1-2 minutes. Top with any desired items (onion, jalapeno, etc.)
